Three Bean Cassoulet



1 12 to 16oz pkg turkey smoked sausage or kielbasa (or light beef-pork smoked sausage)

2 medium carrots, peeled, quartered & sliced into small pieces
1 medium onion, chopped
optional: 1 diced green pepper and 1 small zucchini, chopped
1 28 oz can brown sugar recipe baked beans, partially drained
1 14 oz can diced or crushed tomatoes, undrained
1 15 oz can kidney or black beans, drained
1 10 oz box frozen lima beans

2 cloves minced garlic (or up to 1 tsp minced garlic from a refrigerated jar)
1/2 tsp dried crumbled basil
1/4 to 1/2 tsp dried crumbled thyme
fresh ground pepper to taste (salt is optional)


1. Slice kielbasa lengthwise in half, and slice again crossways to chop. Place in a 
lightly greased 5 to 6 qt slow cooker.
2. Add the vegetables, beans and seasonings.
4. Cover and cook on low 7 to 10 hrs or until the vegetables are tender (3.5 to 5 hrs on high). Serves 4 to 6; nice with bread from the bread machine and a salad.   

I sometimes add 2 or 3 Tbsp of barley to this mixture before it is cooked, which 
thickens the mixture.
